This is one of our hot supper of 5: 2 of our diet and it was very welcome this evening after coming out of the rain and cold. Full of flavor and filling although low in calories!

Recipe for 4 servings
  • 6 chicken thighs, skinned and boned and cut
  • 1 tablespoon smoked paprika
  • 1 clove garlic, minced
  • 2 red onions, cut into thick slices
  • 200g chestnut mushrooms, sliced ​​thick
  • 100ml dry sherry
  • 400ml chicken stock
  • 400g tin of chopped tomatoes
  • 400g tin butterbeans, drained and rinsed
  • small bunch of parsley, chopped
How to make it easy enough Heat some olive oil to medium-high heat in a pan and add the chicken, until golden brown on all sides.

Add peppers, garlic and mushrooms and cook until the onions and mushrooms have softened. It will take about 5 minutes.
